This Udo’s Choice® recipe using Udo’s Oil® is the inspiration of a dinner with friends at Frankies 457 Spuntino in the Carroll Gardens neighborhood of Brooklyn, NYC. Brussels sprouts season has just started (September-March) so we were looking for something we hadn’t done before. Hope you enjoy!
12 brussels sprouts, shredded (about 4 loosely packed cups)
3 oz feta cheese, cut into small cubes (about ¼ inch thick)
For the dressing:
2 tablespoons Udo’s Oil 3·6·9 Blend
1-2 tablespoons good olive oil
2 tablespoons red wine vinegar
Dash of Herbs de Provence (optional)
Salt and freshly cracked pepper, to taste
- Shred the brussels sprouts thinly by hand or with a mandoline (using cut resistant gloves);
- Mix all ingredients in a large bowl and serve immediately.
