Behind every great healthy bowl is a great dressing. This Miso-Tahini Dressing made with Udo’s Oil is key to a delicious and satisfying healthy/ grain/ dragon bowl. Possible pairings are steamed broccoli, cauliflower, squash, kale, or spinach; diced tofu; cooked grains such as quinoa, amaranth, or farro; grated raw carrots or beets; sliced cucumbers, radishes, or avocado; fresh greens; chicken or eggs; and various kinds of seeds and nuts. Make one hour in advance if possible. This is a batch of dressing. Store remaining dressing in a well-sealed glass container in the fridge for up to one week.
Makes about 1 ¼ cups, use a blender
½ cup Udo’s Oil
⅓ cup tahini
1 tablespoon white miso paste
1 medium lemon, juiced
1 medium garlic clove, finely minced or crushed with a press
1 tablespoon rice vinegar
2 tablespoons warm water, or more for desired consistency
Pinch of sea salt and freshly ground pepper, to taste
INSTRUCTIONS:
- Place all the dressing ingredients in a blender, adding the Udo’s Oil and two tablespoons of warm water last, and blend;
- Using a spoon, scrape the dressing from the insides of the blender, making sure that the dressing is blended until smooth. Add additional tablespoon of warm water for desired consistency, making sure not to over-water the dressing;
- Assemble your healthy bowl with desired ingredients, and drizzle with Miso-Tahini Dressing.
